Crockpot Buffalo Chicken

This is one of our "go-to's" for weeknight dinners. The first reason being, I normally have the ingredients on hand. The second, I am able to use the crockpot. Anytime I can use the crockpot to make dinner, I am a happier person. #crockpotrecipe


I also frequently serve this as an appetizer when we have friends & family over. I like to serve it with Hawaiian rolls and/or wheat thins. It is so simple, yet raved about, by all that try it. My cousin's boyfriend actually said that my version was better than hers!




Ingredients

3-5 large chicken breasts

1/2 bottle of hot sauce (doesn't have to be name brand- I usually use Aldi's brand)

1 packet of ranch seasoning (again, Aldi!)

1 brick of cream cheese


Directions

  1. Place chicken breasts into crockpot

  2. Sprinkle the ranch seasoning over all breasts

  3. Pour hot sauce over ranch seasoning

  4. Cover with lid & turn on low for 7-8 hours

  5. Shred chicken & place cream cheese on top (leave for 30 minutes)

  6. Mix cream cheese with everything in crockpot

  7. Serve with rolls

I like to serve these with brioche buns or Hawaiian rolls, and pair with a veggie or salad, for a weeknight dinner. However, I often serve this with wheat thins or Hawaiian rolls as an appetizer.
